In citrus marinated prawns, garnished with mango osmotized in ponzu, avocado and papaya gel.

TURBOT

Grilled turbot garnished with low temperature fennel, vanilla and mussel beurre blanc sauce.

ROE DEER FILLET

Grilled loin of roe deer with rosemary, accompanied by grilled foie gras, sautéed mushrooms and sweet potato cream.

Vermouth cocktail with pineapple and champagne mousse and passion syrup.
